A Version of Lomo Saltado




There is the Peruvian version with french fries thrown in and served with rice...and there might be several other Latin versions...This one is my adapation (of this moment its different every time!) of what Blad use to make.....It easy and fast and delicious...

Sirloin Beef or other cuts of beef cut into strips
1 small onion cut into thinish slices
1/2 green pepper and/or red pepper cut in thinish slices
1/2 cup tomato sauce or some crushed tomatoes in the can or enough to cover beef n veggies
salt n pepper to taste
3 tsp vinegar white or balsamic
1-2 tsp soya sauce or worchestire sauce
If u want ot spice it up add some chili pepper flakes
Oil olive or vegetable oil...

If your meat is not top quality you can cut it up and marinate it for 1/2 hr up to a day to tenderize, in the soy sauce, vinegar, salt n pepper. Otherwise mix same ingredients together and cook in a tablespoon of oil over high heat until mostly brown....leave some red on the inside of the meat so it stays tender. Remove with juices to a bowl, add another tbs of oil, cook onions in pan add peppers after 3 mins and cook until desired tenderness, add tomato sauce cook about 2-3 mins add meat and leave on low until ready to serve... (not more than 15-20 min)...serve with white rice or pasta or potatoes or wtv u wish!

Ingredients

  • 1 (16 ounce) package frozen French fries
  • vegetable oil as needed
  • 1 pound beef tri tip, sliced 1/8 to 1/4 inch thick
  • salt and pepper to taste
  • 1 large onion, sliced into strips
  • 3 large tomatoes, peeled, seeded, and sliced into strips
  • 1 yellow chili pepper (preferably Peruvian aji amarillo)
  • 1/4 cup distilled white vinegar
  • 1 dash soy sauce to taste
  • 2 tablespoons chopped fresh parsley

Directions

  1. Prepare the bag of French fries according to package directions.
  2. While the French fries are cooking, heat the oil in a frying pan over medium-high heat. Season the sliced meat with salt and pepper to taste. Fry the meat until just cooked, and the juices begin to release. Remove the meat from the frying pan, then cook the onions, with additional oil if needed, until they are transparent. Stir in the tomato and aji amarillo; cook until the tomato softens. Pour in the vinegar and soy sauce, add the French fries, cover, and cook until the beef is done, about 3 minutes. Season to taste with salt and pepper, and sprinkle with chopped parsley to serve.
